Hamantaschen Recipe

For full disclosure, I usually double the recipe because I like to give these cookies away to friends and neighbors. They are delicious, and people love them. So, go ahead and double the recipe… It’s real-life math and double the love.

Ingredients:
½ cup butter (or butter substitute)
¾ cup sugar
¼ cup milk (or milk substitute)
2 teaspoons vanilla extract
2 cups all-purpose flour
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
one jar or can of jelly or pastry filling
You can go crazy and buy a bunch of different flavored fillings, too.
Because, why not?

Tip: I buy my can o’ filling in the baking section of the grocery store. It’s labeled, "cake and pastry filling.” They often have Hamantaschen flavors like apricot and poppy, but any jelly will do.

Cream together butter and sugar.
Beat in milk and vanilla.
Add flour, baking powder, baking soda, and salt.

Wrap in plastic and refrigerate for an hour.

Pre-heat oven 375F.
Lightly grease pan.

On a lightly floured surface roll out dough to about ¼” or so.

Tip: if the dough is too hard and crumbly to work with, put it in the microwave for 10-15 seconds. It should soften nicely, but not too much!

After rolling out, cut out circles (2 ½” diameter is great). I used small mason jars (4 oz).

Add a ½ teaspoon of filling to the center of the circle.

Pinch one side together. It will look like a calla lily. Then make two more pinches to complete the triangle.

Put in oven on middle rack at 375 for 10 mins.

Bake, share, & enjoy!
